Hi!
The past few weeks have been tough as Kelsy started working outside the home full time. Now I’m the one in charge of keeping us all fed!

I posted what I planned to cook vs what we actually ended up eating last week. Was my meal planning really worth it? You be the judge!

Are you or is someone in your family lactose intolerant? Does dairy aggravate your allergies? Are you looking for more plant-based nutrients? If so, you should try my recipe for Cashew Cream! Funny thing happened, I had a guy come to our raw milk pick up this week, I asked him how he heard about our WAPF group – he told me he read your blog and found out about the WAPF which then led him to search for his local chapter – how cool is that? Small world ‘eh!

Happy Monday,

This week I am sharing two recipes: (1) a very sweet, decadent, vegan, cane-sugar free treat that will seriously knock your socks off! Coffee flavored, maple sweetened coconut whipped cream (or mousse). Everyone that has tried this claims it tastes like a mousse or pudding, but it can also be used as a whipped cream or icing for cake/cupcakes, and (2) a super easy, basic marinara sauce (creating no kitchen waste).

I love your Carnival! So much good information. Thank you for allowing me to join in. I shared Lacto-Fermented Saurkraut without a Crock. I’ve made LF beans and cucumbers in jars before, but never sauerkraut. I’ll have a follow-up taste test blog on Thursday. :-) My next adventure will be to see if I can it. I met a Russian gal in an antique shop who said she canned hers in the oven on 200 degrees for 20 minutes. I figure that can’t kill too many enzymes.
