Grains are demonized by several modern food philosophies. Certainly, some people must exclude them at least on a temporary basis to regain health and healing.

This is because grain based foods are some of the hardest to digest, so any sort of compromise of gut function requires their restriction in the diet.

However, don’t buy into the notion that hunters and gatherers didn’t eat grains. They most certainly did! The most compelling evidence is the discovery of wheat seeds in the stomach of Ice Man, who lived some 5300 years ago in the Alps.

Even more compelling, tests of primitive cooking utensils from Paleolithic hunter gatherers from 32,000 years ago reveal that they consumed oats as a primitive porridge or even bread!

Thus, if you digest grains well and enjoy them, then eat them without guilt knowing they have nourished humanity for millennia. Just take care to prepare them traditionally as the recipes in this section reveal.
