Easy coconut milk fruit smoothie that is ready in one minute and only needs three ingredients.

As the weather warmed in recent weeks, I found myself making smoothies again as my favored afternoon snack.

Lately, I’ve been making this very simple coconut milk fruit smoothie below that only has three ingredients.

It’s mildly sweet and loaded with healthy fats…a great option for children after school or anytime you need a super filling pick-me-up.

Here’s what the ingredients look like when I’m ready to blend in the food processor. So easy!

If you prefer fermented dairy as your base, try this strawberry banana kefir smoothie instead.

  • 7 ounces whole coconut milk
  • 1 medium banana
  • 8-10 frozen strawberries

Instructions

  1. Place all ingredients in a food processor or blender.

  2. Mix until smooth.

  3. Serve immediately.

    Looks yummy, but I have always avoided canned foods due to the plastic lining inside them. Is that a concern for you?

      Coconut milk in a can is better than a carton. Yes, it isn’t perfect. I suggest the safest brand I can, but ultimately, if you can make your own coconut milk that is the absolute best approach.
