When I whip up any type of egg recipes for the evening meal, my kids call it “having breakfast for dinner”.
We follow this fun tradition in our home once or twice a month. The practice encourages them to eat more eggs simply by mixing up the routine. This is a nutritional goal that I am constantly striving for as there is no better food for a child’s brain development than eggs!
During the week, afternoons can be quite hectic like many families. To reduce stress, I focus once a week on preparing easy egg recipes that take minutes to cook. I always feel good about serving them. They are Mother Nature’s perfect food! An easy, fast meal reduces the chance of having to resort to takeout, Uber eats or (ugh) a frozen organic pizza.
In my view, it isn’t helpful to think of egg recipes as suited for breakfast, lunch or dinner. Any of them can be served day or night. A dish made with eggs fits perfectly well almost anytime or anywhere.
