Our family consumes about 2 chickens every week! As a result, I use a number of easy chicken recipes so that my family doesn’t get bored with the same old dishes. In addition, I focus on chicken dishes that can be prepared quickly. Most weeknights there are plenty of after-school activities that leave little time for complicated cooking.
If you are buying conventional meats for budget reasons, using chicken breasts is best for preparing these healthy recipes. This is because the toxins and hormones from conventional chicken farming tend to collect in the dark meat.
Otherwise, the best use of your food dollar is to buy organic and/or pastured birds. Simmer them slowly in your clay or enameled slow cooker. A large pot on the stovetop works too! Another option is to roast them in the oven.
And, of course, don’t forget to use those bones to make one of the most important chicken recipes of all: chicken broth!
