Eggs are Mother Nature’s perfect food, so it’s no surprise that choosing egg recipes for breakfast over more convenient processed and/or and sugary choices is a very wise decision!
In our home, our children know that Mom or Dad will always serve up breakfast eggs when school testing is going on or an important sporting event is happening that day. There is no more nourishing food that is a perfect blend of healthy fats and complete protein than eggs, preferably from your own backyard hens or at least pastured from the farmers market or healthfood store. Free range usually doesn’t cut it taste or nutrition-wise!
The great thing about eggs is that you can prepare them so many different ways. They never get old if you mix it up frequently. The egg rules in our house are two-fold. First, any egg recipes for breakfast must be simple, easy and quick such that the kids can prepare the dish themselves if necessary. And second, the best breakfast is one where the eggs are prepared your favorite way. So if one child wants them scrambled and another boiled, Mom or Dad always try to oblige! Short order cooking is always ok in our house when it comes to eggs.
