One Minute Chocolate Mousse (fruit-sweetened)

Fast and healthy chocolate mousse recipe ready in only one minute using three whole-food ingredients lightly sweetened with fruit.

If you love the decadence of homemade chocolate pudding but need something lighter on the stomach and faster to prepare, then I suggest this one-minute chocolate mousse as a delicious stand-in.

I developed this easy recipe after enjoying chocolate mousse for dessert at a fancy steak restaurant recently.

I thought to myself, “Hey, I’ll bet I can make this waaaay healthier”.

So, I came up with this fruit-sweetened version made with grassfed cream while messing around in the kitchen yesterday!

I promise you that this mousse literally takes one minute to prepare once you have the 3 simple ingredients ready to go.

You don’t even need to chill the bowl first as many mousse recipes suggest. When you use REAL grassfed heavy cream, the high quality of the dairy negates the need for an extra nudge to whip up into a beautiful, thick mousse!

It is certainly one of the fastest desserts you can make that will satisfy a sweet tooth with just a few bites too!

If you don’t have any date syrup on hand, you can substitute evaporated cane sugar, coconut sugar, or maple syrup instead. You can also use raw honey, but the strong taste of most types of honey does affect the flavor of the mousse.

I highly recommend trying the date syrup though!

Among the many benefits of date syrup, it is easier to digest because it is a simple sugar versus a disaccharide. It is also far less likely than other whole sugars to trigger an autoimmune reaction for those that are sensitive (which is why dates are allowed on the GAPS diet).

One Minute Chocolate Mousse (three ingredients)

Ingredients

  • 1 cup heavy cream preferably grassfed
  • 1/4 cup date syrup
  • 1/4 cup cocoa powder or cacao
  • stevia optional

Instructions

  1. Pour cream into a medium glass bowl.

  2. Add cocoa or cacao powder and date syrup.

  3. Whip ingredients together with a handheld mixer for about one minute until thick with the mousse pulling away from the sides of the bowl.

  4. Taste, and if desired, add a few drops of stevia extract for additional sweetness, remixing again for a few seconds. My family likes it without added stevia, but some palates may prefer it.

  5. Serve immediately. Refrigerate leftovers in a glass bowl with a secure fitting lid.

Recipe Notes

Some sources say that chilling the glass bowl before preparation helps the cream whip better. I have not found this to be the case. The mousse whips up just fine in about one minute with a room-temperature glass bowl.
