Bison meat is becoming a more popular alternative to beef especially in the United States. The buffalo recipes I enjoy in my home are completely interchangeable with grass fed beef.
Ground buffalo is the usual way this meat is purchased and consumed, but the availability of buffalo steaks and roasts is becoming more widespread usually at local butcher shops and other specialty stores.
Bison is usually comparable in price to true grass fed beef. This is due to the increased costs of grazing animals for their entire lives with no use of feedlots. Buffalo do not typically respond well to the same abusive practices that cattle endure. Hence, even conventional buffalo meat is almost always a safe bet.
