My parents never made breakfast pancakes when I was growing up. So, no surprise that they were my favorite treat while on summer road trips. One unforgettable experience was ordering a stack of buckwheat pancakes at a Howard Johnson’s restaurant. They were not at all what I expected with an overly strong flavor and firm texture that did not at all appeal to a picky 10 year old!

Fortunately, the experience didn’t turn me off from making pancakes for my own family! We enjoy healthy breakfast pancakes in our home at all times of the day – even dinner!
