Cajun Sausage Skillet

This Cajun sausage skillet recipe is a delicious blend of rice, spices and crushed tomatoes to tantalize the taste buds with mildly spicy flavor and hearty enough to serve as a one-pot meal.

  1. Slice the sausage links into one-quarter inch thick pieces.

  2. Chop the onion and bell pepper and mince the garlic. Set aside.

  3. Melt the butter in a large skillet on medium heat and sauté the sausage until slightly browned.

  4. Add the onion, pepper, and garlic to the skillet and continue cooking until slightly softened (about 5 minutes).

  5. Add the sea salt and spices to the skillet and cook for one more minute to release the flavors.

  6. Add the chicken broth, rice and crushed tomatoes to the skillet. Stir to combine.

  7. Bring to a boil and then turn down the heat to medium-low. Affix the cover to the skillet and let simmer for 20 minutes.

  8. Remove the skillet from the heat and let cool for 5 minutes on the counter.

  9. Serve immediately.

  10. Refrigerate leftovers in a glass container with a tight fitting lid for up to four days. Delicious as reheated leftovers!
