Today I’m linking to one of the best cookbooks I’ve come across in awhile – Heartland: The Cookbook. The recipes are great (from rendering lard to smoked goat cheese to all sorts of delicousness) but it photos and stories really do capture the heart of the heartland.

I wish it had been available years ago. If you want to know how to safely can low acid foods (like bone broth), or how to reduce the sugar in canning recipes, this is the book for you.
