Interesting post on the milk cure! I’d heard of fasting for 4 days with veggie and fruit juices, but milk is new to me. I’ll be interested to read how it turns out!

I just ordered pickling lime so I can fully explore and experiment the way Nourishing Traditions says to prepare corn products. Anyone using this to make polenta, cornbread, etc.? I’d love some feedback.

I would just like to say how thankful I am for the Monday Mania posts. I have gleaned a tremendous amount of useful information and I am so appreciative of every blogger who participates. I am in the process of transitioning to a GAPS/SCD type of diet and have discovered the more real my food, the better I feel…imagine that! I have subjected my family to a lengthy adventure to a dairy for raw milk, which we now wonder how we lived without. We are hearty consumers of local organic beef, I have just made fermented ginger soda, and purchased my first 5-pound bag of almond flour. I continue to find inspiration among this community of bloggers and again, I am just so grateful.

My husband is Finnish and we eat a lot of cultured dairy using a starter that has been in his family for over 100 years. I am planning on making a traditional Finnish cake but renovating his grandmother’s recipe to include soaking the flour in homemade sourcream.

I am sharing my Gluten Free recipe for Oatmeal Toffee Crunch Cookies- they are so good!
This recipe can be made with “regular” flour and oats if you don’t have an issue with gluten.
