Many of us know the benefits of coconut…especially young coconuts. However, opening one can be a nightmare! Believe me, I learned the hard way about that. So, I posted an easy picture tutorial to get you in that coconut in no time at all!

We’ve created a recipe for cinnamon rolls that are so decadent, gooey and delicious, you’ll never believe they are gluten-free! They are pull-apart style similar to a coffee cake or monkey bread- it’s a recipe you’ve just got to try!

These banana nut muffins are a go-to recipe that we make and freeze to have on hand. They are super easy and nutrient-dense. (Gluten-Free)

The last recipe we’re sharing today (did a lot of baking over the weekend) is for Clementine Cake. This moist, delicious cake is so versatile- we serve it as a birthday cake (or cupcakes!) or at holidays or even for breakfast occasionally, lol. It’s gluten-free and dairy-free, naturally, with no substitutions needed. Take advantage of all the in season Clementines and try this recipe.

Happy New Year!
I linked to my new recipe for Pecan Pie Cookies. The recipe is gluten free but can easily be converted to “normal” flour too. They are a thumbprint type cookie and are very easy to make.

I posted a recipe for Potato & Leek Soup. The soup is vegan although I strongly recommend adding some local cheddar to finish it off. I used blue potatoes grown in my garden which contain the same “blue” antioxidants usually only consumed in the summer months from blueberries! The soup didn’t turn out the bright blue hue I was hoping for, but it was very delicious nonetheless! Substitute any local organic potato and enjoy!
