Thanks for hosting. My post this week is about the DVD, The Oiling of America. In this DVD, Sally Fallon Morell and Dr. Mary Enig expose myths about cholesterol and grassfed animal fat. It’s wonderful how simply and clearly Sally presents facts. I always learn something new from Sally’s presentations.

I linked up a recipe to Pumpkin Chocolate Chip Cookies. There are 2 recipes in the one post. Recipe 1: Whole Wheat flour, dairy, egg, soy-free, & freezer cookie option. Recipe 2: Free of gluten, dairy, egg, soy, corn, & chocolate chips. Both versions of the cookie were very well received and I don’t think the readers here will be disappointed either. I ttried to respond twice to Ruth’s blog about the baked chicken, but every time it just lost my message and told me something about Captcha. I answered the question is gave (a math dealie) but still, it took my message and didn’t post it. Hmmm.

Oh well, I’ll answer her here: I roast chicken almost exactly the same way, except not as much garlic (not a big fan) and I also add a little allspice to the salt mixture. My DH likes roast chicken with either some ham hunks or some slices of bacon (from our milkfed/pastured pork) stuffed into the cavity, too. I also use two onions instead of one because we use less garlic. The lemons give it the ooomph, as far as I’m concerned. My son like me to take the legs, once the bird is baked, and fry them a little in bacon grease. He likes browned chicken with just a little crusty, crunchy stuff on it from frying the skin.

Thanks for reminding me about roast chicken – think I’ll do that for tonight’s meal!
