Hello Sarah,
I really appreciate your site and the variety of information you provide. I have a question on alternative grain pastas such as corn, quinoa or einkorn. Are these “safe” to eat by simply boiling the noodles in the usual way or do they need some special preparation? I would think soaking them in an acidic medium would turn them to mush. I do eat these pastas and haven’t noticed any ill effects. I just wonder if this is the best thing to do.

How do you soak it Sarah? In something acidic? Does it matter the type of pasta? And for how long? Does it change the cooking time/instructions at all?
I tried soaking pasta once and just ended up with a gross mess, so I’ve never tried again. Would love some more direction!
You can soak it too long for sure … some brands are more delicate than others and the thicker the pasta, the better the results. If you get a gloppy mess, then try soaking for a shorter period (experiment with small amounts of pasta to see which works for the brand you are using). Nuts are similar .. if you soak cashews too long for example, they get moldy and gross.

I just looked at their flour on Jovial’s website and am confused. They state that they remove most of the germ and most of the bran for longer shelf life. Is having the germ and bran mostly removed desirable?
It is best to grind your own flour fresh to retain the nutrients and maximize flavor. I’ve ground the Einkorn wheat berries into flour and it is wonderful. Made the best waffles!
